Southwestern u.s. circle fields?

I was flying to Arizona from Illinois and in the Southwestern Region of the U.S. I saw what appeared to be fields in the shape of Perfect circles. I am wondering if anyone could give me a valid answer as to what this is and Why. I have grown up on a farm and around agriculture.
